Prepare & Enjoy Low Carb Microwave Mocha Puddings in 10 Seconds

Are you in the pursuit for a quick cooking fix? You’re on the right page! You might be someone who turns their nose up at cooking in a microwave but we’re here to tell you that it actually yields some pretty tasty outcomes.
Here are a few tips for microwave cooking before you get started:

  • Know your microwave
  • Always use microwave-safe dishes
  • Keep an eye on the microwave


  • 220 g Mascarpone cheese (and extra to serve)
  • 1/2 cup strong coffee
  • 1/3 cup tahini
  • 1/4 cup cream
  • 7 tablespoons of xylitol
  • 1/4 cup cocoa powder
  • 1/4 cup almond flour
  • 2 teaspoons of vanilla essence
  • 2 large eggs
  • 1/3 cup toasted walnuts – chopped edible flowers to garnish (optional)


Combine the Mascarpone, coffee, tahini and cream in a Microwave-safe bowl and heat in the microwave for 40 seconds to a minute until the mixture has melted and is smooth in texture.

Whisk in the xylitol, cocoa powder, almond flour, vanilla essence and eggs. Divide the mixture between 6 cups and microwave, 2 or 3 puddings at a time, for 50 seconds on high. The centre of each pudding should still be a bit moist. Serve the puddings warm with a dollop of Mascarpone cheese, some chopped walnuts and garnish with edible flowers (optional).
